Carrot Pudding

INGREDIENTS:

2 eggs
2 cups grated carrots
1/3 cup orange juice
2 teaspoons grated orange rind
½ teaspoon cinnamon, nutmeg, clove and ginger
½ cup oil
2/3 cup granulated sugar
¼ cup cranberries
1 1/3 cups flour
1 teaspoon baking powder

PREPARATION:

Mix all ingredients and bake for 35 minutes at 350 degrees. Test if it is ready by inserting a toothpick until it comes out clean. Decorate to suit.
